Ingredients:
4-6 Boneless Chicken Breast or Thighs
1 Jalapeno
2 Potatoes
1 lg Can Ranch Style Beans with broth
1 Bag Frozen Corn
1 Can Rotel Tomatoes
1 pkg Taco Seasoning
Garnish With:
Sliced Swiss Cheese
Slice of Avocado
Dallop of Sour Cream
Cooking Instructions:
Put chicken, Potatoes (cut up)and whole Jalapeno in crock pot and cover with water. Cook on low or med 4 to 6 hours. Remove chicken from water and cut into bite size pieces. Return chicken to water. Add:Frozen Corn, Ranch Style Beans and Rotel cook on high until it simmers for 5 Minutes..
Serving Suggestions:
Serve in Soup Bowl and Garnish.
