Ingredients:
5 pounds small red potatoes, cubed 8 hard cooked eggs, chopped 1 pound sliced bacon, cooked and crumbled 2 cups shredded cheddar cheese 1 Vandalia or sweet onion, chopped 1 ½ cups (12 oz) sour cream
1 cup Mayo 2-3 tsp prepared mustard Chopped Green Onion 1 tsp salt ½ tsp pepper
Cooking
Instructions:
Place potatoes in a greased 15x10x1 baking pan; sprinkle with salt and pepper. Bake at 425° for 40-45 minutes or until tender. Cool in pan on wire rack. In large bowl combine potatoes, eggs, bacon, cheese, onion and chives. In small bowl combine sour cream, mayo and mustard; pour over potato mixture and toss to coat.
