Ingredients:
2# or 3# Pork Loin Roast
Dried Herb Rub
2 Tbsp EV Olive Oil
1 Tbsp Kosher Salt
1 Tbsp Blk Pepper
2 Tbsp Smoked Paprika
1 Tbsp Granulated Garlic
1 tsp dry Thyme leaves
1 tsp Oregano
¼ tsp Cheyenne Pepper
1 tsp dry Basil
1 Tbsp Corn Starch
2/3 C Cold Water
Cooking Instructions:


1. Pre heat oven to 400 deg.

2. In a large plate mix all dry spices and salt together.

3. With 1Tbsp of olive oil rub pork loin with the other Tbsp olive oil coat a shallow sided cookie sheet. This will help clean up.

4. Roll pork loin in spice mixture until well coated and spices are all on pork loin.

5. Place on Oiled Sheet pan and cook in hot oven for 30 to 40 minutes or until internal temperature is 137deg.

6. When desired temperature is reached remove from oven cover with foil and allow to rest until internal temperature is 145drg.

7. Mix corn starch and 1/3 C cold water to make a creamy mixture and remove covered pork loin to clean plate to rest.

8. Place the cookie sheet on a stovetop burner and turn fire on low and 1/3 C water while scraping all of the bits off the pan. While stirring, add the starch and water mixture and stir until it thickens and boils.

Serving Suggestions:
Turn off heat and slice pork loin and serve with the pan gravy. Great with garlic mashed potatoes.
Additional Comments:
Cooking only to 137deg and allowing to rest until it reaches 145deg will insure a nice and juicy result.
